    I love this cookbook! I wish my husband wasn't savagely allergic to soy but a lot of the time I bake with vegan recipes and then just toss in a dash of milk where it calls for soy so it's still healthy, but won't kill Mister.

    Vegan baking is sooooo awesome, love that you're out to convert people! It's god's work! ;)

    Okay that sounds sooo good! I love cookies with oats in them.. it makes them healthy ;) but peanut butter and chocolate??! that is the best ever!

    I wonder if rice milk or almond milk could be substituted for the soy milk for people with allergies?

    This recipe sounds great. I've made vegeterian dishes for dinner twice this week (I'm not a vegeterian but am trying to eat healither). These sound delicious. I am totally going to make them! Thanks for sharing!

    These are soo good. I was eating them for breakfast too!
    I tried two variations:
    1) I used soy-nut butter in place of both the peanut butter and the oil, and they came out great. A little lower in fat, too, if you're watching that kinda thing.
    2) I added cocoa powder so they came out as oatmeal chocolate-chocolate chip peanut butter cookies.

    I so LOOOVE tricking people with Vegan cookies! I'm not Vegan, but I just don't like it when people assume Vegan or vegetarian food is less good. Anyway, I will be making these and laughing in the faces of all my friends and coworkers.

    For those who asked, rice or almond milk can absolutely be swapped with soy milk!

    All of my baking is vegan. And you know what that means... I eat raw cookie dough without a care in the world. WIN!
